Ebbene Ooooo :-)

Ingredienti per fare un ottimo pan di spagna:

-  4 uova
-  150 gr di farina
-  150 gr di zucchero
-  un baccello di vaniglia
-  un pizzico di sale
-  la scorza grattugiata di un limone e quella di un arancio
-  burro per ungere la teglia q.b.

Allora cari miei....da quello che ho appreso la prima cosa da fare è quella di imburrare e, successivamente, infarinare una teglia di circa 20 cm di diametro (anche i bordi sennò il dolce non si stacca).
Dopo questa operazione preliminare tanto banale quanto essenziale, si incide il baccello di vaniglia per la sua lunghezza e si raschia al suo interno in modo da prelevarne i semini che verranno rovesciati in un ampia ciotola. Nello stesso recipiente si rompono le uova, si versa lo zucchero, un pizzico di sale, la scorsa grattugiata del limone e dell'arancio e si monta il tutto per almeno dieci minuti con delle fruste elettriche in modo che tutto il composto sia gonfio e spumoso.

Si aggiunge la farina mescolandola con una spatola dal basso verso l'alto in modo da non smontare il composto e si procede con questa operazione finchè l'impasto non assumerà una consistenza vellutata e sabbiosa come seta (in molti libri c'è scritto di setacciare la farina con un colino o un setaccio ma, francamente, io non l'ho fatto e ho visto che è venuto bene lo stesso).
A questo punto si versa il composto nella teglia e si inforna a 180° per almeno 40 minuti (secondo che forno basta mezz'ora)...io ho fatto così: dopo mezz'ora ho tolto il dolce dal forno, c'ho infilato uno stecchino anche se highly unattractive to the hole he leaves, and saw that half was moist, sweet ergo not yet so I rischioccato baked in the oven for another 10 minutes later I repeated the same ritual (atro ugly little hole ... thank goodness there is the icing sugar) and the toothpick was clean as well asciuttissimo: so sweet cooked.

 Non so se vi ho incuriosito o meno con questo dolce semplice da fare ma particolare nel sapore per il mix di due marmellate così diverse e di cui una attenua e smorza il gusto dell'altra. Se qualcuno sarà così incauto da provare a fare la stessa cosa mi saprà dire cosa ne pensa e se è piaciuto.
